Cranberry Relish

Ingredients
3 cups fresh cranberries
1/2 cup cold water
1/2 cup boiling water
1/2 cup golden raisins
½ cup chopped walnuts *optional
1 large orange, juice and rind
2 cups sugar
Grated rind of 1/2 lemon

Directions

  1. Wash the cranberries and pick out any remaining debris (stems, leaves, etc).
  2. Boil them in a cup of cold water until the skins pop and the berries become soft.
  3. Blend them into a puree using a hand-held immersion blender and then add the boiling water, raisins, walnuts, sugar and jouce from orange. Peel the oranges removing the pith from the rind and dice. Add the rind to the mixture.
  4. Next, stir in the grated lemon rind, and cool the relish.
  5. Transfer relish to a bowl and serve or store in an airtight container in the fridge, serve cold.

Thanksgiving relish
Serve on top of brie cheese and crackers
Use as a condiment on turkey sandwiches
