Creamy Tuscan Chicken

When I first made creamy Tuscan chicken, I was really just trying to get my fiancé, Carr, to eat something green that wasn’t our normal go to asparagus or broccoli. I remember stirring the sauce hoping the handful of spinach I’d just tossed in would melt into the background unnoticed. He sat at the table, skeptical, fork in hand. “What’s all that green stuff?” he asked. “Flavor,” I said, trying to sound confident. He took one bite, then another, and by the third, he was quiet which was a good sign. When his plate was empty, he looked at me and said, “You can make this again.” Now it’s our go-to comfort dinner. I don’t even have to sneak the spinach anymore; he reminds me to buy it.
Ingredients
1 tbsp extra-virgin olive oil
4 boneless skinless chicken breasts
Kosher salt
Pepper
1 tsp dried oregano
3 tbsp butter
3 cloves garlic, minced
1 ½ cup cherry tomatoes, halved
3 cups baby spinach
1/2 cup heavy cream
1/4 cup of freshly grated parmesan
2 cups of quinoa
Directions
- In a medium pot, boil water and add a pinch of salt. Once boiling, add your rinsed quinoa, reduce heat and cover the pot. Follow directions on bag, approximately about 15 minutes.
- In a large skillet oven medium heat, heal oil. Add chicken and season with salt, pepper and oregano. Cook until golden and no longer pink, approximately 8 minutes per side. Remove from skillet and set aside.
- In the same skillet over medium heat, melt butter. Stir in garlic and cook until fragrant, approximately 1 minute. Add cherry tomatoes and season with salt and pepper. Cook until tomatoes are beginning to burst then add spinach and cook until spinach is beginning to wilt.
- Stir in heavy cream and parmesan and bring mixture to a simmer. Reduce heat to low and simmer until sauce is reduced, approximately 3 minutes. Return chicken to skillet and cook until heated through, approximately 5-7 minutes.
- Place quinoa in a shallow bowl, top with chicken breast and enjoy!
Notes: You can swap quinoa with organic fusilli corti bucati pasta.
